This collection contains everything you’ll need to make a crowd-pleasing sausage-based charcuterie board!

Epicurean Cutting Board: This 6”x8” paper composite cutting board is custom made by our friends at Epicurean. Their simple shape features a handy hang hole; every board is dual-sided while being thin, lightweight, and dishwasher-safe. These NWS exclusive boards also feature our logo.

8 oz  NWS Kraut: Our lacto-fermented Hausmade Sauerkraut satisfies your caraway desires with each bite. We make our Sauerkraut fresh with cabbage, caraway seeds, and sea salt. Then we allow it to ferment for about a month.

4 oz Hausmade Mustard

4 oz Cornichons

1lb Polish: We use plenty of garlic in our Smoked Polish Sausage, which starts with Midwest Heritage Berkshire pork. This sausage is smoked and fully cooked: ready for the grill, the steamer, or a simple pasta dish.

1lb your choice of raw sausage:

Classic German Brat- Get your mustard trio ready, baby! This sausage features veal, Berkshire pork, milk, salt, and super-duper secret Germanic spices.

Beer Brat- We call this one the "big friendly" because it's made with a MN staple, Grain Belt Premium beer. This sausage features Grain Belt beer, Berkshire pork, Smokehaus Bacon, salt, pepper, and ground mustard.

Italian Sausage- "MIA MADRE QUELLA SALSICCIA!" Or you can just say "Damn! That's good." This sausage features Berkshire pork, salt, pepper, cayenne, crushed pepper, garlic, dried parsley, coriander, fennel seed, and bay leaves.

Jalapeño Bacon Brats- This sausage is an Eric favorite. It features Berkshire pork, Smokehaus Bacon, jalapeños, ginger ale, salt, brown sugar, and spices.

Apple Brats- It took us several years to source the perfect apples to use for our recipe, and it does not disappoint. We grind Berkshire pork and combine it with dried organic apples, apple juice, spices, and salt.

German Potato Sausage - This seasonal favorite is made with Midwestern Berkshire pork, potatoes, 'kraut, onions, and spices.

Sausages Details

  • All Berkshire pork is ground in Haus and hand-pumped.

  • We use natural casings for all of our sausages.

  • Each package weighs approx. 1.00 lb

  • Sausages are raw (not smoked) and ship frozen

  • Made by the friendly, surly, and creative team of smokers in the historic Dewitt Seitz building.

SHIPPING DETAILS: Due to the perishable nature of our specialty, hand-crafted food, we require expedited shipping using UPS Ground or 2-day services. Everything is packed in a lined box with ice to keep the food cold as it arrives on your doorstep. The shipping rate depends on the final destination of the order and ranges from $18-$65. Orders taken Sunday-Tuesday are shipped the day after they are received (pending product availability). We also ship on Thursdays for orders placed Wednesday that are shipped within Minnesota.
